Yeah, I mean obviously I'm not privy to all the details but considering the nature of the game that seemed especially relevant here so I figured I'd mention it...SORRY FOR THE HASSLE here's your write-up, then! I apologize in advance for the fact that the series is kind of vague on certain details, though.
Evangelion Unit 01's height is never clearly stated and pretty inconsistently animated, but best guestimate seems to put her at around 40m tall.
So with that out of the way, Evas are kind of...high maintenance, being giant cyborg monsters masquerading as robots. Usually they require a pretty significant source of power and operate connected to an umbilical cable. Without it, the Evangelion can run on an internal battery, but that only lasts 5 minutes.
Evangelions can also go berserk, though, moving of their own will usually after the internal battery runs out or the pilot is incapable of doing anything. Unit 01 has gone berserk on a few occasions, usually behaving in an animalistic and brutal manner as she finishes whatever fight she's involved in. Protecting the pilot inside is probably one of her priorities due to the Eva containing the soul of Shinji's mother. Towards the end of the series Unit 01 goes berserk, eats the angel she is fighting, and takes in its s2 engine, supposedly giving her an unlimited source of power.
For a pilot to properly synch with an Evangelion, the entry plug they sit in must be filled with LCL.. The pilot also tends to need to be wearing an interface headset, and if possible wears a plug suit for better synch rates, however the latter is not actually required. Synch also depends on a few other factors, like the pilot's compatibility with the soul inside(hence the standard use of a mother-child bond) and the pilot's psychological state.
Evangelions are shown using a variety of weapons, though the most commonly used by Unit 01 are an appropriately sized rifle and a progressive knife. The latter is stored in the Eva's shoulder and vibrates at a high frequency to allow more efficiency. Evas can also use their AT fields as a nearly impenetrable shield--only other AT fields that are strong enough are ever shown to be able to get past one.
The Evangelions show some regeneration capabilities, however the extent of these is unknown. They are able regrow organs at the very least, and have been able in some manner to replace missing limbs and even heads. The process seems to take some time normally, but Unit 01 is seen taking foreign body parts and using them to regenerate herself immediately, such as ripping off part of an Angel and growing a new arm from it. The Evas are also protected by their armor, however the primary function of this is actually to restrain them--losing a good bit of hers made NERV incredibly concerned about losing control of Unit 01.
